About this coffee

Ana Bolanos has been a coffee producer her whole life. In 2015, Ana and her husband decided to focus on specialty coffee production and sold one of their three farms. Today, they grow high-quality specialty coffee on 2 farms and produce excellent lots such as this one.

In this lot, they cultivate high-quality varieties, including the “ombligon”.

Ana’s 5 children are now grown-ups. Her children are following in her footsteps and are coffee producers. Her daughters are professionals in the field. She says her biggest dream – successfully bringing up her children – has already come true. All she dreams of now is to improve her processing and drying infrastructure.

Cultivation

Ana’s greatest challenge is climate change. Yet she is relentless. Thanks to her specialty productions and high-quality varieties, Ana is able to ask for higher prices for her excellent products.

In this lot, together with Ombligon, Ana and her husband grow Pink Bourbon, Caturra, Tabi, Geisha and Pacamara.

Harvest and post-harvest

Ana carefully processes coffee to preserve the nuanced aromas she has cultivated. She selectively handpicks ripe, red cherries, which she then grinds on her farm. She ferments the coffee and then washes it in clean water to remove any remaining mucilage. The parchment is usually dried on marquesinas, parabolic dryers placed on the roof of her house.

Ombligon

Ombligon comes from Ombligo, the Spanish word for belly-button. It’s a local name for a variety that looks like a belly-button. The exact origin of this variety is not clear. Some think it is a new variety selected from coffee that grows at an abandoned CENICAFE research centre in Huila, others believe it could be another term for Pacamara. Either way, when treated with a focus on quality, Ombligon produces an enjoyable, high-quality cup of coffee.
