The Specialty Academy aims at the formation of highly-qualified professionals with different specializations, which is why it follows the SCA Coffee Skills Programs’ subdivision of courses and disciplines.

Introduction to Coffee

Basic course whose aim is to provide the needed tools and information about the world of coffee to people who are approaching this field for the first time in a professional way.

Barista

This course is not only about the skills connected to different methods of brewing but also about the fundamental notions linked to the grinding of coffee beans, the handling and maintenance of machinery and utensils, paramount to anyone who wants to work as a barista.

Roasting

This course explains everything there is to know about the art of roasting, which enables coffee to develop its amazing variety of organoleptic features.

Sensory

A multi-layered course focusing on many aspects, not only the sensorial one, but also the methodologies and protocols that make this tasting system a way to scientifically define the quality of each coffee.

Brewing

This course provides an overview of the world of specialty coffee: from the basic notions on the different types of filter coffee (v60, aero-press, clever, chemex, French press, moccamaster, etc…) and how to tell the difference between manual and automatic filters to the analysis of SCA-codified recipes, correct coffee to water ratio, over-extraction or under-extraction, including the know-how to prepare filter coffee at home.

Latte Art

This course does not follow the SCA certification criteria but issues a certification in line with the “Latte Art Grading System”, which awards milk jugs of different colours (white, orange, green, red, black and gold) depending on the technical ability demonstrated by the student. There is the possibility to attend either one-to-one or group courses; the duration of the course varies from one to two days, depending on the skills and requests of the student.

EVERY COURSE IS DIVIDED INTO THREE LEVELS
1. BASIC LEVEL

No particular skill is required to attend the course, which offers an overview of the chosen discipline The candidate can then decide whether or not to move on to the next level. The basic course is worth 5 credits and lasts a total of 7 hours.

2. INTERMEDIATE LEVEL

Designed for those who have attended the basic level, or have already gained experience in the field connected to the chosen discipline. It lasts 14 hours and is worth 10 credits.

3. PROFESSIONAL LEVEL

This course offers a highly-specialized formation and therefore requires an expert knowledge of the field and the completion of the intermediate level. The duration of the courses is a minimum of 14 hours and is worth 25 credits. This controlled and certified formation system involves tests and exams of the acquired skills, and is completed when students have collected a 100 credits, after which they are awarded the SCA diploma.

AMATEUR COURSES FOR COFFEE LOVERS

The Academy reserves something special for coffee lovers, the curious fans of the world of specialty coffee. Which is why it is about to organize tasting events by way of its Introduction to Coffee for those who want to find out more about the world of specialty coffee, so that the people who attend will be able to tell the difference between standard commercial coffee and unique craft coffee. There will be a series of tasting days aimed at the discovery of what lies at the bottom of a cup of coffee: a real journey into the world of coffee, from its origins in Ethiopia to the modern day. The information shared about the processing, roasting and brewing intends to give coffee lovers the needed tools to taste and savour knowledgeably the different flavours, from green coffee to the various single-origins.

TRIAL PREPARATION COURSES AND MIXOLOGY COURSES

Those who inhabit and breathe the world of coffee would often like to take part in skills competitions – hence, a series of formation courses have been designed to prepare those interested for the competitions in the various disciplines. These courses are individual and tailor-made, because they focus on the specific training needed for each specific target and are based on competition simulations.
However, it’s not only about coffee. The Specialty Academy also offers cocktail mixology courses. This course does not provide SCA certification and, contrary to the other courses available on the market, just wants to give future professionals the possibility of taking part in a sort of boot camp that can prepare them for the hardships of the real professional world.
